Simple Pesto Pasta

I have a ton of fresh basil growing and this is such an easy and delicious way to use it up! A simple pesto with basil, pine nuts, and parmesan tossed with pasta and fresh arugula.

Ingredients

  • 2 cups fresh basil

  • 1/4 cup pine nuts

  • 1/4 cup parmesan, grated

  • 1 clove garlic

  • 1 teaspoon red pepper flakes

  • 1/2 cup olive oil

  • 1 pound spaghetti

  • 3 cups arugula

Instructions

  1. Heat a large salted pot of water over high heat and cook the pasta to al dente.

  2. Make the pesto by combining the basil, pine nuts, parmesan, and garlic in a food processor. Start to blend and stream in the olive oil until smooth.

  3. Add the pesto to a large bowl and toss with the past and 1/4 cup of pasta water. Fold in the arugula and enjoy.

Takes 20 minutes
