Simple Pesto Pasta
I have a ton of fresh basil growing and this is such an easy and delicious way to use it up! A simple pesto with basil, pine nuts, and parmesan tossed with pasta and fresh arugula.
Ingredients
2 cups fresh basil
1/4 cup pine nuts
1/4 cup parmesan, grated
1 clove garlic
1 teaspoon red pepper flakes
1/2 cup olive oil
1 pound spaghetti
3 cups arugula
Instructions
Heat a large salted pot of water over high heat and cook the pasta to al dente.
Make the pesto by combining the basil, pine nuts, parmesan, and garlic in a food processor. Start to blend and stream in the olive oil until smooth.
Add the pesto to a large bowl and toss with the past and 1/4 cup of pasta water. Fold in the arugula and enjoy.
Takes 20 minutes
