Roasted Eggplant with Yogurt
This is such a simple, tasty side (it tastes better than it looks) of roasted eggplant with sumac yogurt.
Ingredients
2 egglplants, cut into wedges
2 tablespoons olive oil
1/2 cup greek yogurt
1 teaspoon sumac
Salt and pepper
Instructions
Heat oven to 450 degrees.
Coat the eggplant with olive oil, a pinch of salt and pepper. Roast for 30 minutes.
Meanwhile mix the yogurt with sumac and a pinch of salt.
Top the roasted eggplant with yogurt.
Takes 30 minutes
Serves 4 to 6
