Roasted Eggplant with Yogurt

This is such a simple, tasty side (it tastes better than it looks) of roasted eggplant with sumac yogurt.

Ingredients

  • 2 egglplants, cut into wedges

  • 2 tablespoons olive oil

  • 1/2 cup greek yogurt

  • 1 teaspoon sumac

  • Salt and pepper

Instructions

  1. Heat oven to 450 degrees.

  2. Coat the eggplant with olive oil, a pinch of salt and pepper. Roast for 30 minutes.

  3. Meanwhile mix the yogurt with sumac and a pinch of salt.

  4. Top the roasted eggplant with yogurt.

Takes 30 minutes
