Spicy Roasted Potatoes

These potatoes - roasted with chiles and tossed with lemon zest - are great along just about anything.

Ingredients

  • 1 pound Yukon gold new potatoes, chopped

  • 2 red Fresno chiles, sliced

  • 4 garlic cloves, grated

  • 1 teaspoon cumin

  • 1 teaspoon coriander

  • 2 tablespoons olive oil

  • 1 lemon, zest and juice

  • Salt and pepper

Instructions

  1. Heat oven to 425 degrees

  2. Toss the potatoes with olive oil, spies, garlic, and chiles. Add to a sheet pan.

  3. Roast for about 40 minutes until crisp. Cool for a few minutes then add the lemon zest and juice.

Takes 45 minutes

Serves 4 to 6
