Spicy Roasted Potatoes
These potatoes - roasted with chiles and tossed with lemon zest - are great along just about anything.
Ingredients
1 pound Yukon gold new potatoes, chopped
2 red Fresno chiles, sliced
4 garlic cloves, grated
1 teaspoon cumin
1 teaspoon coriander
2 tablespoons olive oil
1 lemon, zest and juice
Salt and pepper
Instructions
Heat oven to 425 degrees
Toss the potatoes with olive oil, spies, garlic, and chiles. Add to a sheet pan.
Roast for about 40 minutes until crisp. Cool for a few minutes then add the lemon zest and juice.
Takes 45 minutes
Serves 4 to 6
