Mushroom Risotto

Creamy risotto with lots of mushrooms makes a great side and is hearty enough for a main meal.

Ingredients

  • 2 1/2 cups arborio rice

  • 4 tablespoons butter

  • 1 pound cremini mushrooms, sliced

  • 1 small onion, grated

  • 2 cloves garlic, grated

  • 1 cup grated parmesan

  • 1/2 cup white wine

  • 6 cups chicken or vegetable stock

  • 2 teaspoons fresh thyme, chopped

  • Salt and pepper

Instructions

  1. Melt butter in a large pot over medium heat. Add the onion and cook for 5 minutes. Add the garlic and mushrooms and cook for another 5 minutes. Season with thyme, salt and pepper. Add the arborio rice and stir to coat. Add the wine and cook for 2 minutes.

  2. Add 1/2 cup of stock, stir and simmer until absorbed. Continue adding stock about 1/2 cup at a time and stirring until the rice is cooked through.

  3. Stir in the parmesan and enjoy.

Takes 35 minutes
