Spicy Mushroom Quesadillas
Mushrooms sauteed with butter and lots of spices and layered in a tortilla with cheese - so simple, but so good!
Ingredients
8 ounces mushrooms, sliced
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon cayenne
1 teaspoon salt
2 tablespoons butter
1 cup monterey jack cheese, shredded
2 large flour tortillas
1/2 cup sour cream
1 lime, juiced
Instructions
Melt the butter in a large skillet over medium heat. Add the mushrooms, chili powder, cumin, cayenne, and salt. Saute for about 5 minutes until just tender. Remove and set aside.
Place a large tortilla in the skillet, add half the mushrooms, half the cheese and fold in half. Repeat with the other tortilla. Cook on each side 2-3 minutes until crisp on the outside and melted on the inside.
Cut into triangles and serve with sour cream mixed with lime juice.
Takes 10 minutes
