Spicy Mushroom Quesadillas

Mushrooms sauteed with butter and lots of spices and layered in a tortilla with cheese - so simple, but so good!

Ingredients

  • 8 ounces mushrooms, sliced

  • 1 tablespoon chili powder

  • 1 teaspoon cumin

  • 1 teaspoon cayenne

  • 1 teaspoon salt

  • 2 tablespoons butter

  • 1 cup monterey jack cheese, shredded

  • 2 large flour tortillas

  • 1/2 cup sour cream

  • 1 lime, juiced

Instructions

  1. Melt the butter in a large skillet over medium heat. Add the mushrooms, chili powder, cumin, cayenne, and salt. Saute for about 5 minutes until just tender. Remove and set aside.

  2. Place a large tortilla in the skillet, add half the mushrooms, half the cheese and fold in half. Repeat with the other tortilla. Cook on each side 2-3 minutes until crisp on the outside and melted on the inside.

  3. Cut into triangles and serve with sour cream mixed with lime juice.

Takes 10 minutes
