Simple Greek Salad
Nothing beats a bowl of tomatoes, cucumbers, onions, cheese and olives tossed in a simple flavorful dressing.
Ingredients
3 tomatoes, chopped
2 cucumbers, peeled, seeded and chopped
1/2 cup kalamata olives, sliced in half
1/2 red onion, thinly sliced
1/4 cup fresh oregano chopped
1/4 cup fresh mint
1 cup feta, chopped
1/4 cup red wine vinegar
1/4 cup olive oil
1 teaspoon dijon mustard
salt and pepper
Instructions
Mix the red wine vinegar, olive oil, dijon mustard, a pinch of salt and pepper, and half the oregano.
In a large bowl add the tomatoes, cucumber, onion, oilives, and cheese. Toss with the dressing and top with the mint and remaining oregano.
Takes 10 minutes
