Simple Greek Salad

Nothing beats a bowl of tomatoes, cucumbers, onions, cheese and olives tossed in a simple flavorful dressing.

Ingredients

  • 3 tomatoes, chopped

  • 2 cucumbers, peeled, seeded and chopped

  • 1/2 cup kalamata olives, sliced in half

  • 1/2 red onion, thinly sliced

  • 1/4 cup fresh oregano chopped

  • 1/4 cup fresh mint

  • 1 cup feta, chopped

  • 1/4 cup red wine vinegar

  • 1/4 cup olive oil

  • 1 teaspoon dijon mustard

  • salt and pepper

Instructions

  1. Mix the red wine vinegar, olive oil, dijon mustard, a pinch of salt and pepper, and half the oregano.

  2. In a large bowl add the tomatoes, cucumber, onion, oilives, and cheese. Toss with the dressing and top with the mint and remaining oregano.

Takes 10 minutes
