Crispy Smashed Potatoes
These potatoes make a great quick side. Cooked potatoes are smashed then topped with cheese and baked until crispy.
Ingredients
8 small potatoes (or as many as you want)
1/2 cup parmesan cheese
2 tablespoons olive oil
Salt and pepper
Instructions
Preheat oven to 450 degrees
Add potatoes to a pot and cover with about an inch of water. Bring to a boil and cook for about 10 minutes until tender. Drain and cool slightly.
Once cool enough to handle place on sheet pan and crush the potatoes with the bottom of a cup. Drizzle with olive oil and parmesan cheese and season with salt and pepper. Cook in the oven for 10 minutes until crispy.
Takes 20 minutes
