Crispy Smashed Potatoes

These potatoes make a great quick side. Cooked potatoes are smashed then topped with cheese and baked until crispy.

Ingredients

  • 8 small potatoes (or as many as you want)

  • 1/2 cup parmesan cheese

  • 2 tablespoons olive oil

  • Salt and pepper

Instructions

  1. Preheat oven to 450 degrees

  2. Add potatoes to a pot and cover with about an inch of water. Bring to a boil and cook for about 10 minutes until tender. Drain and cool slightly.

  3. Once cool enough to handle place on sheet pan and crush the potatoes with the bottom of a cup. Drizzle with olive oil and parmesan cheese and season with salt and pepper. Cook in the oven for 10 minutes until crispy.

Takes 20 minutes
