German Potato Salad

German Potato Salad is one of my favorite ways to eat a potato. These tasty baby potatoes soak up tons of flavor from the mustardy bacony vinaigrette.

Ingredients

  • 2 pounds baby potatoes

  • 6 slices bacon, chopped

  • 1 onion, diced

  • 1/3 cup apple cider vinegar

  • 2 tablespoons sugar

  • 1 tablespoon Dijon mustard

  • 1 teaspoon salt

  • 1/4 cup parsley, minced

Instructions

  1. Add the potatoes to a large pot of salted water and bring to a boil. Simmer until tender. Once slightly cooled cut the potatoes into quarters.

  2. While the potatoes cook add the bacon to a large skillet over medium heat. Once the bacon is crisp remove and set aside. Add the diced onion and cook for 6-8 minutes until tender. Add the vinegar, sugar, and mustard to the skillet and whisk to mix well.

  3. Add the potatoes and mix well. Top with the reserved bacon and parsley.

Takes 30 minutes

Serves 4-6
