Chipotle Sweet Potatoes

This is great on a weeknight or a as a holiday side. It is amazing how good thinly sliced sweet potatoes, cream and chipotle can taste.

Ingredients

  • 2 sweet potatoes, peeled and thinly sliced

  • 1 cup heavy cream

  • 1 tablespoon pureed chipotle peppers

  • Salt and pepper

Instructions

  1. Preheat oven to 400 degrees

  2. Mix cream, chipotle, salt and pepper

  3. Place 1 layer sweet potatoes in a cast iron skillet, top with half the cream, repeat with another layer.

  4. Bake for 30 minutes

Takes 40 minutes

Serves 4

Notes: To make the chipotle pepper puree take a can of chipotles and blitz in the food processor.  Alternatively just chop those babies up.
