Chili Rubbed Ribeye

My kids favorite dinner thing for dinner is steak (what did I create?) so I'm always trying to make mix up steak night. This ribeye is flavor packed with a rub of chili power and finished with chipotle butter. I love to serve this with Chipotle Sweet Potatoes.

Ingredients

  • 1 boneless ribeye

  • 1 tablespoon olive oil

  • 1 tablespoon ancho chili powder

  • 1 teaspoon paprika

  • 1 teaspoon cumin

  • 2 tablespoons butter

  • 1 tablespoon chipotle pepper puree (or chopped chipotle peppers in adobo)

  • 1 lime

  • Salt & pepper

Instructions

  1. Preheat grill to 500 degrees

  2. Mix together chili powder, paprika, cumin, salt and pepper. Oil steak and rub with spice mixture.

  3. Marinate in spices for at least 15 minutes

  4. Grill about 6 minutes per side until medium rare

  5. Meanwhile make the chipotle butter. Add 1 tablespoon purred chipotles to room temperature butter and mix together.

  6. When the steaks are cooked, tent with foil and rest 5-10 minutes.

  7. Slice and top with chipotle butter, serve with lime.

Takes 30 minutes
