Teriyaki Beef

A simple teriyaki sauce brings so much flavor to stir fried beef and sugar snap peas.

Ingredients

  • 1 pound flank steak, sliced thin

  • 2 cups sugar snap peas

  • 4 tablespoons soy sauce

  • 2 tablespoons sugar

  • 2 tablespoons mirin

  • 3 cloves garlic, grated

  • 1 tablespoon ginger, grated

  • 2 teaspoons corn starch

  • 1/4 cup chicken stock

  • 5 scallions, sliced (white and light green parts)

  • 2 tablespoons oil

  • Rice for serving

Instructions

  1. Place the flank steak in a bowl and mix with 2 tablespoons soy sauce and 1 tablespoon sugar. Marinade for at least 10 minutes.

  2. In a bowl mix the chicken stock, 2 tablespoons soy sauce, 1 tablespoon sugar, mirin, garlic, ginger and corn starch.

  3. Heat the oil in a large skillet over medium high heat. Remove the beef from the marinade and saute in the skillet for 3 minutes until brown. Remove and set aside. Add the sugar snap peas and scallions to the skillet and saute for 2 minutes. Return the beef to the skillet and add the sauce. Saute for a few minutes until the sauce is thickened.

  4. Serve over rice.
