Sheet Pan Cauliflower Scampi
This is so freaking good. Instead of shrimp, cauliflower is cooked with lemons, wine and butter tossed with spaghetti. And yes, I get that scampi is actually a type of shrimp so this title makes no sense, but I don’t care.
Ingredients
1 head of cauliflower cut into florets
1 lemon, 1 thinly sliced
1 cup white wine
3 cloves garlic, grated
2 tablespoons butter, cut into small pieces
1/4 cup parsley, chopped
1/4 cup parmesan cheese, grated
Olive oil
Salt and pepper
Instructions
Preheat oven to 450 degrees
Place the lemon slices on a baking sheet. Top with olive oil, salt and pepper. Pour the wine (carefully!) onto the baking sheet.
In a bowl toss the cauliflower with olive oil, garlic, salt and pepper. Place the cauliflower on the baking sheet and top with the butter.
Bake in the oven for 15 minutes until the cauliflower is tender, top with parmesan and parsley. Serve with crusty bread or spaghetti (or both).
