Greek Chicken Skewers
This chicken is marinated in yogurt and herbs which tenderizes it and gives it a ton of flavor. Then is is skewered, grilled and served with a fresh tzatziki sauce.
Ingredients
1 pound boneless skinless chicken, cut into bite sized pieces
1 1/2 cup greek yogurt
1 tablespoon fresh thyme
1/4 cup parlsey, chopped
1 lemon, juiced
1 teaspoon chili flakes
1 teaspoon salt
1 teaspoon pepper
1/2 cucumber, grated
2 tablespoons dill, chopped
1 garlic clove, grated
Instructions
Mix 1/2 cup yogurt, thyme, parsley, chili flakes, salt, pepper and juice of half a lemon. Add the chicken and marinade for 30 minutes.
Heat the grill on high. Skewer the chicken and grill for about 7 minutes per side until cooked through.
While the chicken cooks make the tzatziki. In a small bowl mix remaining yogurt, cucumber, garlic, dill, and juice of half a lemon.
Serve the grilled chicken with warm pita and the tzatziki.
Takes 15 minutes (plus 30 minutes marinade)
