Roasted Tomato Bruschetta
Roasted tomatoes tossed with garlic, basil and served with crusty bread. So good!
Ingredients
1 loaf French bread
2 pints grape tomatoes
1/2 cup basil leaves, thinly sliced
2 garlic cloves, grated
1/2 cup olive oil
1 tablespoon red wine vinegar
Salt
Instructions
Heat the oven to 400 degrees.
Toss tomatoes with 1/4 cup olive oil, season with salt and spread on a sheet pan. Roast for 20 minutes.
Transfer the tomatoes to bowl and toss with garlic while still warm, then let cool to room temp.
Increase the oven temperature to 450 degrees.
Cut the bread into slices and drizzle with olive oil and sprinkle with salt. Roast the bread for about 10 minutes until golden brown.
While the bread cooks, mix the basil and red wine vinegar with the tomatoes.
Top the bread with tomatoes and enjoy.
Takes 35 minutes
