Vegetable Scampi
Fresh veggies sauted with a lemon, butter, wine sauce and tossed with linguine!
Ingredients
1 pound linguine
1 summer squash, thinly sliced
1 carrot, peeled and thinly sliced
1 green bell pepper, thinly sliced
1 cup cherry tomatoes
1 shallot, minced
3 cloves garlic, minced
1/2 cup wine
2 tablespoons butter
2 tablespoons olive oil
1/2 teaspoon red pepper flakes
1 teaspoon salt
1/2 teaspoon pepper
1 lemon, juiced
1/2 cup parmesan, grated
1/4 cup parsley, finely chopped
Instructions
Bring a large pot of salted water to a boil and cook the pasta to al dente.
Heat the butter and olive oil in a large skillet over medium heat. Add the shallot and garlic and cook for 2 minutes. Add the squash, carrot and bell pepper and saute for 5 minutes until soft. Add the wine and lemon juice and simmer until slightly reduced.
Once the pasta is cooked add a splash of the pasta water and toss the pasta with the vegetables. Add the tomatoes, cheese and parsley and toss well before serving.
