Vegetable Scampi

Fresh veggies sauted with a lemon, butter, wine sauce and tossed with linguine!

Ingredients

  • 1 pound linguine

  • 1 summer squash, thinly sliced

  • 1 carrot, peeled and thinly sliced

  • 1 green bell pepper, thinly sliced

  • 1 cup cherry tomatoes

  • 1 shallot, minced

  • 3 cloves garlic, minced

  • 1/2 cup wine

  • 2 tablespoons butter

  • 2 tablespoons olive oil

  • 1/2 teaspoon red pepper flakes

  • 1 teaspoon salt

  • 1/2 teaspoon pepper

  • 1 lemon, juiced

  • 1/2 cup parmesan, grated

  • 1/4 cup parsley, finely chopped

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta to al dente.

  2. Heat the butter and olive oil in a large skillet over medium heat. Add the shallot and garlic and cook for 2 minutes. Add the squash, carrot and bell pepper and saute for 5 minutes until soft. Add the wine and lemon juice and simmer until slightly reduced.

  3. Once the pasta is cooked add a splash of the pasta water and toss the pasta with the vegetables. Add the tomatoes, cheese and parsley and toss well before serving.

Takes 20 minutes
