Tabbouleh

There is nothing I love more than a big bowl of tabbouleh. This is packed with bulgur, parsley, mint, tomatoes and cucumber and tossed with a flavorful dressing.

Ingredients

  • 1/2 cup bulgur

  • 1/2 cup boiling water

  • 2 cups chopped parsley

  • 1 cup chopped mint

  • 2 tomatoes, finely chopped

  • 1 English cucumber, finely chopped

  • 1 lemon, juiced

  • 1/4 cup olive oil

  • 1 teaspoon salt

  • 1/2 teaspoon allspice

  • 1 teaspoon sumac

Instructions

  1. Put bulgur in a bowl and pour boiling water over. Set aside for 20 minutes until the water is absorbed.

  2. Mix the lemon juice, olive oil, salt, allspice and sumac together.

  3. Add the bulgur, herbs and veggies to a large bowl and toss with the dressing.

Takes 25 minutes
