Quick Pickled Red Onion
I love to make these simple pickled red onions. They so easy and add a punch to just about anything.
Ingredients
1 red onion
1 cup water
1 cup white vinegar
1/4 cup sugar
1/2 tablespoon salt
1/2 tablespoon coriander seed
Instructions
Thinly slice the red onion with a mandoline and add to a jar.
Mix water, vinegar, sugar, salt and coriander in a small pot and heat to medium heat until everything is dissolved. Cool to room temperature and poor over the onions. Top with a lid and refrigerate for at least an hour. Keep in the fridge for up to 10 days.
Takes 1 hour
Serves 6-8
