Za’atar Sweet Potato with Yogurt and Pistachio
These tasty sweet potatoes are topped with a flavorful yogurt and pistachios. This is hearty enough as a main and makes a great side.
Ingredients
1 sweet potato, cut into wedges
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon Zat'ar
1/2 cup greek yogurt
1/4 cup chopped cilantro or Schug
1/4 cup chopped pistachios
Instructions
Heat oven to 425 degrees
Toss the potatoes with olive oil, za’atar, and salt. Place on a sheet pan and roast for 25 minutes until tender.
Meanwhile mix together the yogurt with cilantro or Schug (if you have leftover Schug this a great way to use it).
Top the potatoes with yogurt and pistachios.
Takes 30 minutes
