Za’atar Sweet Potato with Yogurt and Pistachio

These tasty sweet potatoes are topped with a flavorful yogurt and pistachios. This is hearty enough as a main and makes a great side.

Ingredients

  • 1 sweet potato, cut into wedges

  • 2 tablespoons olive oil

  • 1 teaspoon salt

  • 1 teaspoon Zat'ar

  • 1/2 cup greek yogurt

  • 1/4 cup chopped cilantro or Schug

  • 1/4 cup chopped pistachios

Instructions

  1. Heat oven to 425 degrees

  2. Toss the potatoes with olive oil, za’atar, and salt. Place on a sheet pan and roast for 25 minutes until tender.

  3. Meanwhile mix together the yogurt with cilantro or Schug (if you have leftover Schug this a great way to use it).

  4. Top the potatoes with yogurt and pistachios.

Takes 30 minutes
