Sweet Potato Puree

Roasted sweet potatoes whipped with butter and cream - simple and delicious!

Ingredients

  • 2 large sweet potatoes

  • 1/2 stick butter

  • 1/2 cup heavy cream

  • 1 tablespoon salt

  • 1 teaspoon allspice

Instructions

  1. Heat oven to 350 degrees.

  2. Prick the sweet potatoes all over then roast in the oven for an hour until tender.

  3. Once cool enough to handle cut in half and scoop the flesh into a food processor. Add the butter, cream, salt and allspice. Pulse until smooth. Add more cream if needed.

Takes 1 hour 15 minutes
