Chipotle Short Ribs

These short ribs are marinated in chipotles, grilled low and slow, and topped with a spicy chipotle sauce - so good!

Ingredients

  • 1 can chipotle chiles in adobo

  • 1/4 cup lime juice

  • 4 cloves garlic

  • 1 white onion, peeled and quartered

  • 1/4 cup olive oil

  • 1/4 cup cilantro

  • 1/2 cup honey

  • 4 pounds bone-in short ribs

Instructions

  1. In a food processor mix together the chipotles, lime juice, garlic, onion, olive oil and cilantro. Pulse until smooth.

  2. Take out 1/2 cup of the sauce and set the rest aside.

  3. Season the short ribs with salt and pepper then rub 1/2 cup of marinade all over. Marinate for 2 hours or overnight.

  4. Heat the grill (or oven) to 200 degrees. Grill the short ribs for 2 hours then increase the heat to 250 degrees. Wrap the ribs in two layers of foil and grill for until 2 hours until tender.

  5. While the ribs cook, heat the remaining sauce and honey over medium low heat until slightly thickened and set aside.

  6. When the ribs are tender remove from the foil and serve with the sauce on top or on the side (careful it’s spicy!)

Note: Save the leftovers for tacos!

Takes 4 hours (+ marinating time)
