Spinach Artichoke Lasagna

Weeknight lasagna? I’m here for it. Layers of spinach and artichoke dip inspired filling topped with marinara sauce and lots of cheese. So good!

Ingredients

  • 10 ounce frozen spinach, thawed and drained

  • 1 can artichoke hearts, chopped

  • 1 package cream cheese, room temp

  • 1/2 cup sour cream

  • 2 cups mozzarella cheese, shredded

  • 1/2 cup parmesan, grated

  • 1 jar marinara sauce

  • 1 package fresh lasagna

  • salt and pepper

Instructions

  1. Heat the oven to 400 degrees

  2. Put the spinach, artichokes, cream cheese, 1 cup mozzarella, parmesan and a pinch of salt and pepper in a bowl and mix well.

  3. Add 1/4 cup sauce to the bottom of a baking dish. Top with a layer of noodles the 1/4 of the spinach artichoke mixture. Repeat 4 layers. Top with another layer of noodles then cover with the remaining marinara sauce and mozzarella cheese.

  4. Cover with foil and bake for 20 minutes, then remove the foil and bake another 10 minutes until the cheese is golden brown. Let sit for 5 minutes before slicing.

Takes 40 minutes
