Braised Chicken with Mushrooms and Kielbasa

Crispy skinned chicken thighs braised with mushrooms, tomatoes, and kielbasa.

Ingredients

  • 1 pound bone-in skin-on chicken thighs

  • 1 tablespoon butter

  • 1 tablespoon olive oil

  • 4 cloves garlic, minced

  • 1 28 ounce can of whole tomatoes

  • 1 pound kielbasa, sliced

  • 8 ounces of mushrooms, sliced

  • 1 cup chicken stock

  • salt and pepper

Instructions

  1. Heat butter and oil in a large skillet over medium heat. Season the chicken thighs with salt and pepper. Add the chicken to the hot pan skin side down. Sear for 5 minutes per side. Remove and set aside.

  2. Add the garlic, mushrooms and kielbasa to the pan. Saute for about 5 minutes until the mushrooms are tender. Add the tomatoes, breaking up the tomatoes in the pan. Add the chicken stock and season with a pinch of salt and pepper.

  3. Return the chicken to the pan skin-side up and simmer for about 25 minutes until the chicken is cooked through.

Takes 40 minutes
