Chicken Caesar Tostada
This is a fun and tasty way to eat a salad that it a hit with the whole family. Za’atar spiced chicken is grilled and sits atop a crispy pita with lettuce, tomato and an easy tasty dressing.
Ingredients
4 boneless skinless chicken breasts
1 tablespoon Za’atar
1 cup romaine, shredded
1 tomato, diced
2 pitas, sliced in half lengthwise (so you have one side of the pocket)
1 tablespoon olive oil
1 teaspoon garlic powder
Caesar Dressing:
1 egg yolk
1 cup olive oil
4 tablespoons lemon juice (usually 1 lemon)
1 garlic clove
1 teaspoon Worcestershire
1 cup grated parmesan cheese
1 teaspoon salt
1/2 teaspoon pepper
Instructions
Heat grill to high
Coat chicken with a drizzle of olive oil and Za’atar spices
Brush the pita with olive oil and sprinkle with the garlic powder
Grill the chicken for about 6 minutes per side until cooked through. Let rest for 5 minutes before slicing.
After the first flip of the chicken add the pita and cook for about 3 minutes per side until just crisp.
While the chicken is cooking make the dressing. Add the dressing ingredients to a small bowl and use an immersion blender to blend until smooth.
Toss the lettuce with a bit of dressing and season the tomatoes with salt.
To assemble the “tostada” add some dressing to the pita, top with tomatoes, lettuce and sliced chicken on top. Drizzle with more dressing and add freshly grated parmesan and a squeeze of lemon.
