Spicy Black Bean and Bacon Soup

This soup was the only thing I craved during my pregnancies.  It is supremely spicy and amazingly filling - and enjoyable when pregnant or not.

Ingredients

  • 4 strips of bacon, chopped

  • 3 habanero peppers, seeded and minced (opt for fewer or a milder pepper if you like less heat)

  • 1 yellow onion, chopped

  • 2 garlic cloves, chopped

  • 1 28 oz can whole tomatoes

  • 4 cups chicken stock

  • 2 cans black beans, drained and rinsed

  • Salt and pepper

Instructions

  1. Add bacon to pot and sauté until almost cooked through.

  2. Add onion, peppers and garlic. Season to taste with salt and pepper and cook until soft, 8-10 minutes.

  3. Add beans and tomatoes, crushing tomatoes gently.

  4. Add chicken stock, season with salt and pepper and simmer for 30 minutes.

Takes 40 minutes

Serves 4-6
