Spiced Pork Tenderloin with Cilantro Lime Rice

This pork tenderloin is coated with a spice rub and served over rice with cilantro and lime.

Ingredients

  • 1 pork tenderloin

  • 1 tablespoon chile powder

  • 1 tablespoon brown sugar

  • 1 teaspoon cumin

  • 1 teaspoon allspice

  • 1 teaspoon salt

  • 2 tablespoons olive oil

  • 1 cup rice, cooked

  • 1/2 cup cilantro, chopped

  • 1 lime, juiced

Instructions

  1. Heat oven to 400 degrees.

  2. Mix the chile powder, brown sugar, cumin, allspice and salt together. Rub all over the pork to coat.

  3. Heat olive oil in a large ovenproof skillet over medium heat. Sear the pork on all sides then transfer the oven for about 10 minutes until cooked to an internal temp of 145 degrees.

  4. Meanwhile cook the rice and mix in the cilantro and lime juice.

  5. Slice the pork and serve over the cilantro lime rice.

Takes 25 minutes
