Easy Butter Chicken

This is a delicious weeknight take on an Indian butter chicken. Spicy, tomatoey, creamy deliciousness.

Ingredients

  • 1 chicken breast, cut into small pieces

  • 1 cup greek yogurt

  • 1 lemon, juiced

  • 1 tablespoon garam masala

  • 1 tablespoon numeric

  • 1/2 tablespoon cumin

  • 1 tablespoon ginger, minced

  • 4 garlic cloves, minced

  • 1 onion, minced

  • 4 tablespoons butter

  • 1 28 ounce can crushed tomatoes

  • 1 cup cream

  • 1 cinnamon stick

  • Cilantro, naan and rice for serving

Instructions

  1. Place the chicken in a bowl and toss with yogurt, lemon juice, garam masala, turmeric and cumin. Set aside.

  2. Melt butter in a large skillet. Add the onion, ginger and garlic and saute for 5 minutes until the onion is tender. Add the chicken and saute for 5 minutes. Add the tomatoes, cream and cinnamon stick and simmer for about 10 minutes until the chicken is cooked through.

  3. Serve the chicken over warm naan and rice. Top with cilantro.
