Smashed Veggies

Potatoes, carrots, parsnips, buttermilk, and parmesan make the most delicious smashed veggies.

Ingredients

  • 2 russet potatoes, peeled and chopped

  • 1 large carrot, peeled and chopped

  • 1 large parsnip, peeled and chopped

  • 1/2 cup parmesan cheese

  • 4 tablespoons butter

  • 1/4 cup buttermilk

  • Salt and pepper

Instructions

  1. Add veggies to a pot and cover with about an inch of water and a generous pinch of salt. Bring to a boil and cook for about 10 minutes until tender. Drain and return to the pot.

  2. Use an immersion blender to puree the veggies (not super smooth). Then mix in the buttermilk, parmesan cheese and butter.

Takes 20 minutes
