Roasted Beef Tenderloin

This is my go-to “fancy” dinner. This easy, yet impressive, tenderloin is full of flavor and comes out perfect every time. 

Ingredients

  • 2 pound beef tenderloin

  • 1 tablespoon salt

  • 1 teaspoon pepper

  • 1 teaspoon rosemary, chopped

  • 2 cloves garlic, chopped

  • 2 tablespoon olive oil

Instructions

  1. Mix olive oil, salt, pepper, rosemary and garlic. Add to beef and marinate for 2 hours

  2. Preheat oven to 300 degrees

  3. Sear beef tenderloin on all sides, then place on sheet pan and add to oven

  4. Roast until center is 135 degrees for medium rare, about 1 hour

  5. Take the beef out of the oven, tent with foil and let the meat rest for 20 minutes

  6. Slice the beef tenderloin and enjoy

Takes 3 hours
