Rice with Black Beans and Tomatoes
This is a delicious side of rice stewed with onions, peppers, beans and tomato sauce.
Ingredients
2 cups rice
1 8 ounce can of tomato sauce
1 onion, diced
2 jalapeno peppers, minced
1 can black beans
4 cups chicken stock
2 cloves garlic, grated
2 bay leaves
2 tablespoons olive oil
salt and pepper
Instructions
Heat olive oil in a pot. Saute the onion, garlic and pepper for 5 minutes until tender. Season with salt and pepper. Add the rice and toss to coat well. Add the black beans with their juices, tomato sauce, chicken stock and bay leaf.
Bring to a boil, then reduce heat to low cover and simmer for about 20 minutes until the rice is just tender and the juices are absorbed.
Takes 30 minutes
