Corn Chowder

This simple corn chowder is full of fresh corn, potatoes, bacon and a tasty corn stock.

Ingredients

  • 4 ears of corn

  • 4 slices of bacon, chopped

  • 6 baby potatoes, chopped

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 2 jalapenos, chopped

  • 1 cup milk

  • 1 cup cream

  • Salt and pepper

Instructions

  1. Cut the corn kernals from the cobs and set aside. In a large stock pot add the corn cobs, 2 cups of water, and the milk and cream. Season with salt and pepper and bring to a bowl. Cook for 10 minutes.

  2. Heat a separate pot over medium high heat and add the bacon. Saute the bacon until just crisp then add the onion, garlic and jalapenos. Cook for about 5 minutes until the onion is just tender then add the potatoes and corn. Stir well then add the corn stock. Simmer for about 30 minutes until the potatoes are tender.

Takes 45 minutes
