Potato Quesadillas

These quesadillas are so delicious. They are full of spicy potatoes and black beans and ooey gooey cheese.

Ingredients

  • 2 russet potatoes, diced

  • 1/2 onion, chopped

  • 2 garlic cloves, minced

  • 2 jalopenos, chopped

  • 1 can black beans, drained and rinsed

  • 1 tablespoon paprika

  • 1 tabelspoon chili powder

  • 2 teaspoons salt

  • 1 teaspoon pepper

  • 4 tablespoons butter

  • 2 cups monterey jack cheese

  • 4 large flour tortillas

  • 1 lime, wedges

Instructions

  1. Add the potatoes to a large pot of salted water and bring to a boil. Cook the potatoes until just tender, about 10 minutes, and drain.

  2. In a large skillet melt the butter over medium heat. Add the onion, garlic, jalopenos paprika, chili powder, salt and pepper. Cook for 5 minutes.

  3. Add the potatoes and black beans. Toss well to coat and cook for 5 minutes.

  4. Heat another skillet over medium heat. Add a tortilla and fill with the potato filling and top with 1/2 cup of cheese. Fold and cook on both sides until crisp on the outside and melty on the inside. Repeat for the remaining quesadillas.

  5. Serve with lime.
