BBQ Chicken

This chicken is covered in a tasty rub then slathered in BBQ sauce while it grills. Such a delicious summer meal. I cook this in a smoker, but you can easily use a grill or oven.

Ingredients

  • 1 whole chicken, cut in half

  • 1 tablespoon cumin

  • 1 tablespoon chili powder

  • 1 tablespoon brown sugar

  • 1 tablespoon salt

  • 2 teaspoons pepper

  • 1 bottle BBQ sauce

Instructions

  1. Mix the sugar, chili powder, cumin, salt and pepper together in a small bowl then rub all over the chicken. Marinade in the rub for at least 2 hours or overnight.

  2. Heat the smoker to 180 degrees. (If you’re not using a smoker you can skip this step). Cook the chicken for 1 hour.

  3. Increase the heat to 350 degrees. Baste the chicken in BBQ sauce and cook for another hour until it reaches an internal temp of 165 degrees, about another hour.

  4. Rest for 10 minutes before serving. Serve with extra BBQ sauce.

Takes 2 hours (plush marinading time)
