Portuguese Chicken with Crispy Potatoes
This is my take on Portuguese chicken (or chicken piri piri). It is full of smokey, garlicky, spicy flavor and served with crispy potatoes and a delicious cilantro yogurt sauce.
Ingredients
1 whole chicken
2 dried ancho chilis
8 cloves garlic
2 tablespoons paprika
1 tablespoon coriander
1 tablespoon salt
2 teaspoons pepper
1/4 cup olive oil
1 cup greek yogurt
2 cups cilantro
1 lemon, juiced
8 small potatoes, sliced in half
1/4 cup parmesan, grated
Instructions
Heat grill (or oven) to 425 degrees
Soften the dried chilis by soaking in hot water for 5 minutes. Add the softened chilis, garlic, paprika, coriander, salt, pepper, and olive oil to a food processor or blender and blend until smooth. Coat the chicken with half the marinade and use the other half to toss with the potatoes.
Add the potatoes flesh side down on a sheet pan and top with parmesan cheese. Add the potatoes and the chicken to the grill. Place the chicken breast side down. Cook for about 45 minutes until the chicken is cooked through, flipping the chicken halfway through.
While the chicken and potatoes cook make the cilantro sauce. Add the yogurt, cilantro, lemon juice, and a pinch of salt to a food processor or blender. Blend until smooth.
Let the chicken rest for 10 minutes before slicing. Serve the chicken and potatoes with the cilantro sauce and enjoy!
