Coriander Crusted Tenderloin

Crushed coriander and pepper gives this simply grilled beef tenderloin great flavor. I like to serve these with Sesame Sprouts.

Ingredients

  • 4 6-8 ounce beef tenderloin fillets

  • 1 tablespoon whole coriander

  • 1 tablespoon whole peppercorn

  • 1 teaspoon salt

  • 2 tablespoons olive oil

Instructions

  1. Preheat grill to 500 degrees.

  2. Crush the coriander and peppercorns. Mix with the olive oil and coat top and bottom of the steak with the mixture.

  3. Grill the steaks for 6 minutes per side for medium rare (or until cooked to desired temperature).

  4. Once cooked, cover loosely with foil and rest the steak for 10 minutes (seriously do this)

Note: If you don’t have a mortar and pestle you can toss the whole spices in a small baggy and crush with a meat mallet or instrument of choice.
