Grilled Nashville Chicken Bowl

This is such a satisfying take on Nashville Hot chicken. Chicken thighs are grilled, coated with spicy oil and served over a flavorful slaw. Bonus - fold this into a tortilla for a kickass taco.

Ingredients

  • 1 pound boneless chicken thighs

  • 1 teaspoon paprika

  • 1 tablespoon olive oil

  • 1 teaspoon salt

  • 1/2 teaspoon pepper

    Spicy Oil

  • 1/2 cup canola oil

  • 2 tablespoons cayenne

  • 1 teaspoon chili powder

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • 2 teaspoons salt

  • 1 teaspoon pepper

    Slaw

  • 1/2 red cabbage thinly sliced

  • 1/2 cup cilantro, chopped

  • 1/2 cup mayo

  • 1/4 cup sour cream

  • 1 lime juiced

  • Salt and pepper

Instructions

  1. Heat grill to high.

  2. Add the cabbage to a large bowl. Mix the mayo, sour cream, herbs, lime juice, salt and pepper together. Toss with the cabbage and set aside.

  3. Coat chicken with olive oil, paprika, salt and pepper. Grill for about 8 minutes per side until cooked through.

  4. While the chicken cooks make the spicy oil. In a small pot add the canola oil and spices and cook over medium heat for 10 minutes. Set aside.

  5. When the chicken is cooked through brush the hot oil over the top and serve over the cabbage.
