Honey Balsamic Chicken and Potatoes

This one pan dinner comes together quickly and is packed with flavor thanks to the honey, garlic and balsamic vinegar glaze.

Ingredients

  • 1 pound boneless, skinless chicken thighs

  • 6 small potatoes

  • 2 cloves garlic, grated

  • 1/4 cup balsamic vinegar

  • 1/4 cup honey

  • 2 tablespoons olive oil

  • Salt and pepper

Instructions

  1. Preheat oven to 400 degrees

  2. Mix honey, vinegar, garlic, salt and pepper together and toss with chicken to coat.

  3. Heat olive oil in a large oven proof skillet and sear chicken on both sides.

  4. Slice potatoes in half and add to the skillet flesh side down.

  5. Bake chicken and potatoes in the oven for 20 minutes.
