Harissa Salmon with Herbed Couscous

This is an amazingly bright and flavorful salmon bowl. The salmon is roasted with harissa and lime zest and added to a bowl of herby couscous and topped with lime juice.

Ingredients

  • 1 pound salmon filet

  • 2 tablespoons harissa

  • 1 tablespoon lime zest

  • 1 garlic clove, grated

  • 1 cup couscous, cooked

  • 1/4 cup parsley

  • 1/4 cup cilantro

  • Salt and pepper

  • 2 tablespoons olive oil

Instructions

  1. Heat oven to 450 degrees.

  2. Mix the harissa, garlic, and lime zest together.

  3. Add the salmon to a parchment lined baking sheet and coat with the harissa mixture. Roast for 20 minutes.

  4. While the salmon roasts cook the couscous, then toss with olive oil, herbes, salt and pepper.

  5. When the salmon is cooked through place atop the couscous and serve with more herbs and lime.
