Steak Fajita Bowl

This is a yummy bowl of spice rubbed strip steak snuggled up with grilled veggies, rice, and beans. This is also great strip steak on its own with a side of your choosing.

Ingredients

  • 1 New York Strip

  • 1 tablespoon paprika

  • 1 tablespoon chili powder

  • 1 tablespoon cumin

  • 1 tablespoon salt

  • 1 teaspoon allspice

  • 1 red bell pepper, seeded and halved

  • 1 red onion, quartered

  • 1 cup rice, cooked

  • 1 avocado, sliced

  • 1 lime, juiced

  • 1 jalapeno, sliced

  • 1/4 cup cilantro, chopped

  • 1/4 cup sour cream

  • 1 tablespoon olive oil

  • 1 cup, Quick Black Beans

Instructions

  1. Heat grill to high (450-500 degrees)

  2. Mix paprika, chilli powder, cumin, salt and allspice together. Pat the steak dry with a paper towel then rub with the spice mixture.

  3. Coat the bell pepper and onion with olive oil and season with salt and pepper.

  4. Put the steak, peppers and onion on the grill. Grill for about 6 minutes per side until the steak is medium rare and the peppers and onion is charred. Let the steak rest for 10 minutes before slicing.

  5. To assemble the bowl, add rice, beans, steak and veggies. Top with lime juice, cilantro, avocado and jalapenos.
