Green Goddess Chicken Salad
A flavorful and easy green goddess dressing serves as a marinade for the chicken and a dressing for the salad. So easy and delicious!
Ingredients
4 boneless chicken breasts
1/2 cup greek yogurt
1/2 cup sour cream
1/2 lemon, juiced
1 garlic clove
1 teaspoon salt
1/2 teaspoon pepper
1 cup herbs - parsley, basil, dill, thyme
3 cups romaine lettuce, chopped
2 english cucumbers, sliced
1 cup snap peas, sliced
Instructions
In a food processor blend the yogurt, sour cream, lemon juice, garlic, salt, pepper and herbs.
Remove half the dressing and coat the chicken breasts. Marinade for 30 minutes (or as much time as you have).
Heat the grill to high.
Grill the chicken about 7 minutes per side until just cooked through.
In a large bowl mix the lettuce, cucumbers, and peas and toss with dressing. Top with grilled chicken.
Takes 15 minutes (plus 30 minutes marinade)
