Goulash-ish

Iā€™m not sure if this qualifies as goulash, but it is my version with kielbasa, potatoes and lots of paprika.

Ingredients

  • 1 pound kielbasa, sliced

  • 2 tablespoons butter

  • 1 onion, sliced

  • 2 cloves garlic, grated

  • 1 tablespoon paprika

  • 1 pound red potatoes, sliced

  • 2 cups chicken stock

  • 1/4 cup parsley, chopped

  • Salt and pepper

Instructions

  1. Heat a skillet over medium heat and sear the sliced kielbasa, a couple minutes on each side.

  2. Remove from the pan and add the butter. When the butter is melted add the onions and cook until golden brown, about 5 minutes. Add the garlic, paprika and season with salt and pepper. Cook for 1 minute then add the potatoes and chicken stock. Simmer for 15 minutes until the potatoes are tender.

  3. Add the kielbasa to the potatoes and onions and top with parsley. Serve with sour cream and crusty bread.

Takes 25 minutes
