Garlic Cashew Chicken

This quick dinner is packed with flavor from a delicious garlicky sauce.

Ingredients

  • 1 pound boneless chicken breast, cut into small pieces

  • 1 tablespoon corn starch

  • 1/2 cup water

  • 2 tablespoons soy sauce

  • 1 tablespoon sambal

  • 6 garlic cloves, grated

  • 2 tablespoons rice vinegar

  • 1 cup cashews

  • 1/2 cup green onions, chopped

  • 2 tablespoons canola oil

  • 1 cup rice, cooked

Instructions

  1. In a small bowl mix the corn starch, water, soy sauce, sambal, garlic, and rice vinegar together. Add the chicken and marinade for about 10 minutes.

  2. While the chicken marinades heat a skillet a medium low heat and toast the cashews.

  3. Heat oil in a large skillet over medium high heat. Add the chicken and sear for a couple minutes per side. Pour in the marinade and cook for another 5 minutes until the chicken is cooked through.

  4. Add the cashews and green onions then serve over rice.

Takes 20 minutes
