Balsamic Tomato Penne
This is such a simple delicious sauce with lots of butter, garlic, tomatoes and balsamic.
Ingredients
1 pound penne pasta
1 28 ounce can of San Marzano whole tomatoes
1 stick butter
4 cloves garlic, minced
1/4 cup balsamic vinegar
salt and pepper
Instructions
Bring a large pot of salted water to a boil. Cook the penne pasta to al dente. While the pasta cooks make the sauce.
Melt the butter in a large deep skillet. Add the garlic and cook for 2 minutes. Add the balsamic vinegar and tomatoes. Break apart the tomatoes. Season with salt and pepper and simmer for 15 minutes.
When the pasta is cooked add a splash of pasta water to the sauce then drain and toss the penne with the sauce.
Takes 20 minutes
