Balsamic Tomato Penne

This is such a simple delicious sauce with lots of butter, garlic, tomatoes and balsamic.

Ingredients

  • 1 pound penne pasta

  • 1 28 ounce can of San Marzano whole tomatoes

  • 1 stick butter

  • 4 cloves garlic, minced

  • 1/4 cup balsamic vinegar

  • salt and pepper

Instructions

  1. Bring a large pot of salted water to a boil. Cook the penne pasta to al dente. While the pasta cooks make the sauce.

  2. Melt the butter in a large deep skillet. Add the garlic and cook for 2 minutes. Add the balsamic vinegar and tomatoes. Break apart the tomatoes. Season with salt and pepper and simmer for 15 minutes.

  3. When the pasta is cooked add a splash of pasta water to the sauce then drain and toss the penne with the sauce.

Takes 20 minutes
