Chipotle Bourbon Shrimp

This sauce of bacon, bourbon, butter and chipotle is so freaking good and perfect with the shrimp. Sop that up with crusty bread.

Ingredients

  • 4 slices bacon, chopped

  • 1 pound large peeled, deveined shrimp

  • 2 tablespoons chipotle peppers, chopped

  • 4 tablespoons butter

  • 1/4 cup bourbon

  • 2 cloves garlic, minced

  • 1 teaspoon cumin

  • 1 teaspoon salt

  • 1/2 teaspoon pepper

  • 1 lemon

Instructions

  1. Toss shrimp with garlic, cumin, salt and pepper and let sit 10 minutes

  2. Meanwhile add bacon to skillet and cook over medium heat until they're almost (but not) crisp. Add the shrimp and cook for about a minute on each side then add the chipotle, butter, and bourbon. Simmer for 3 minutes. Top with the juice of half of lemon.

  3. Serve with remaining lemon and bread.

Note: If you’re not into the bourbon you can replace it with white wine or stock.
