Sloppy Jenny

My version of a Sloppy Joe has slightly spicy chorizo and a sloppy egg on top. Yum!

Ingredients

  • 1 pound ground chorizo

  • 1 can tomato sauce

  • 1 onion, grated

  • 1 tablespoons olive oil

  • 2 tablespoons butter

  • 4 brioche buns

  • 4 eggs

  • salt and pepper

Instructions

  1. Heat the olive oil in a saute pan over medium heat. Add the grated onion, salt and pepper and cook for about 5 minutes until tender.

  2. Add the ground chorizo and cook until browned, breaking apart with your spoon. Add the tomato sauce and simmer for 10 minutes.

  3. Butter the brioche buns and heat another saute pan over medium heat. Add the buns to the pan to gently toast then set aside. In the same pan add the 4 eggs and fry sunny side up.

  4. Assemble your Sloppy Jenny by putting the chorizo filling in the bun and topping with an egg. Grab extra napkins!
