Simple Fried Chicken

I was always too intimidated to try fried chicken until I read Mark Bittman’s recipe for this simple method requires no deep frying, no multiple coatings and comes out perfect. This recipe includes a slightly spicy coating and is drizzled with honey.

Ingredients

  • 1 chicken cut into serving pieces

  • Peanut oil for frying

  • 2 teaspoons salt

  • 1 teaspoon pepper

  • 2 teaspoon cayenne, divided

  • 3 cloves garlic, grated

  • 1 egg

  • 2 tablespoons water

  • 1 cup flour

  • Lemon wedges

  • 1/2 cup honey

  • 1 tablespoon butter

Instructions

  1. In a large bowl mix the eggs, water, garlic, salt, pepper and 1 teaspoon cayenne together then toss with the chicken. Next, add the flour slowly and blend it in with your hands.

  2. In a 12 inch cast iron skillet add enough oil to come up about 1/2 inch and head over medium-high heat.

  3. Once the oil is hot, raise the heat to high and slowly add the chicken pieces. Cover the skillet (I use a sheet pan) and reduce the heat to medium-high. Cook for 7 minutes covered.

  4. Meanwhile add the honey, butter and remaining cayenne to small pot and heat over low heat.

  5. Uncover and turn the chicken and continue to cook uncovered for another 7 minutes. Turn and cook for another 5 minutes until both slides are golden brown.

  6. Remove the chicken and drain on paper towels. Drizzle with honey and serve with lemons.

Takes 30 minutes
