Simple Fried Chicken
I was always too intimidated to try fried chicken until I read Mark Bittman’s recipe for this simple method requires no deep frying, no multiple coatings and comes out perfect. This recipe includes a slightly spicy coating and is drizzled with honey.
Ingredients
1 chicken cut into serving pieces
Peanut oil for frying
2 teaspoons salt
1 teaspoon pepper
2 teaspoon cayenne, divided
3 cloves garlic, grated
1 egg
2 tablespoons water
1 cup flour
Lemon wedges
1/2 cup honey
1 tablespoon butter
Instructions
In a large bowl mix the eggs, water, garlic, salt, pepper and 1 teaspoon cayenne together then toss with the chicken. Next, add the flour slowly and blend it in with your hands.
In a 12 inch cast iron skillet add enough oil to come up about 1/2 inch and head over medium-high heat.
Once the oil is hot, raise the heat to high and slowly add the chicken pieces. Cover the skillet (I use a sheet pan) and reduce the heat to medium-high. Cook for 7 minutes covered.
Meanwhile add the honey, butter and remaining cayenne to small pot and heat over low heat.
Uncover and turn the chicken and continue to cook uncovered for another 7 minutes. Turn and cook for another 5 minutes until both slides are golden brown.
Remove the chicken and drain on paper towels. Drizzle with honey and serve with lemons.
