Chicken Avocado Quesadilla
Grilled chicken layered with peppers, onions, avocado and cheese in a tortilla shell topped with a chipotle sour cream.
Ingredients
1 pound chicken tenderloins
2 teaspoons chile powder
2 teaspoons cumin
1 teaspoon salt
1 teaspoon pepper
1 tablespoon olive oil
2 cloves garlic, chopped
1 yellow onion, chopped
1 yellow bell pepper, chopped
1 avocado, chopped
1 cup monterey jack cheese, shredded
1 tablespoon butter
1/2 cup sour cream
2 chipotle chiles, chopped
1 lime, wedged
4 tortilla shells
Instructions
Heat the grill to high.
Toss the chicken with olive oil, chili powder, cumin, salt and pepper. Grill for about 5 minutes per side. Set aside for 5 minutes then chop.
Heat a drizzle of olive oil in a skillet. Cook the onions, bell peppers, and garlic until just tender.
Melt butter in large skillet. Add the tortilla shell and add chicken, peppers, onions, avocado and cheese. Cook on both sides until the outside is crisp and cheese is melted.
Serve with sour cream mixed with chipotle and limes.
