Baked Lemony Gnocchi with Tomatoes and Feta
This is the easiest and most delicious sheet pan dinner. Gnocchi, lemons, tomatoes and feta are roasted together and topped with fresh basil.
Ingredients
1 package gnocchi
1 lemon, sliced
2 pints cherry tomatoes
1 block feta, chopped
1 teaspoon salt
1/2 teaspoon pepper
1/4 cup olive oil
Instructions
Heat oven to 400 degrees.
Add the gnocchi, lemon slices, tomatoes, and feta to a sheet pan. Top with salt, pepper, and olive oil.
Roast for 20 minutes.
Mix together and top with basil.
Takes 25 minutes
