Coconut Chicken Skewers

This chicken is full of flavor from a marinade of coconut milk, ginger, lime, garlic, jalapeno, and cilantro - then skewered and grilled to perfection.

Ingredients

  • 1 pound boneless skinless chicken breast, cut into bite sized pieces

  • 1 can coconut milk

  • 2 jalapenos

  • 2 cloves garlic

  • 2 inches ginger, peeled

  • 1 lime, zested

  • 1/2 cup cilantro

  • 1 tablespoon salt

  • 1 teaspoon pepper

  • 1 red pepper, cut into 1 inch pieces

  • 1 cup rice, cooked

Instructions

  1. In a large bowl add the coconut milk, 1 jalapeno, garlic, ginger, lime zest, cilantro, salt and pepper. Use an immersion blender to blend smooth. Add the chicken pieces and marinade 30 minutes or up to over night.

  2. Heat grill to high. Add the pepper and chicken to skewers. Grill for about 7 minutes per side until the chicken is cooked through.

  3. Serve the chicken over rice with grilled red pepper. Top with sliced jalapenos.

Takes 20 minutes (plus marinade time)
