Chicken Paprikash-ish

Chicken simmered with vegetables, lots of paprika in a creamy yogurt sauce and lots of herbs. So good!

Ingredients

  • 4 chicken breasts

  • 1/4 cup flour

  • 2 tablespoons smoked paprika

  • 2 cloves garlic, chopped

  • 1 onion, sliced

  • 1 red bell pepper sliced,

  • 1/2 cup chicken stock

  • 1/2 cup yogurt

  • 1 tablespoon dill, chopped

  • 1/4 cup parsley, finely chopped

  • 1 lemon, juiced

  • Salt and pepper

  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat

  2. Mix together flour, 1 tablespoon paprika, and a pinch of salt and pepper. Dredge the chicken in the flour mixture then add to the skillet. Cook for about 5 minutes per side until golden brown. Remove and set aside.

  3. Add the onion, red pepper, garlic and another pinch of salt and pepper to the skillet. Cook for 5 minutes until just tender. Add the chicken stock and yogurt and stir until blended. Return the chicken to the skillet and simmer until the chicken is cooked through, about 10 minutes.

  4. Add the lemon juice and top with herbs. Serve over rice or pasta.

Takes 30 minutes
