Spiced Cauliflower Alfredo

This cauliflower is crusted with a spices, seared and then nestled with creamy, cheesy pasta.

Ingredients

  • 1 small cauliflower, chopped

  • 2 teaspoons chili powder

  • 2 teaspoons paprika

  • 1 teaspoon cumin

  • 1 teaspoon thyme

  • 1 teaspoon salt

  • 1/4 cup olive oil

  • 1/2 teaspoon pepper

  • 1 pound fettuccine

  • 1 stick butter

  • 1 1/2 cup heavy cream

  • 1/2 cup parmesan, grated

Instructions

  1. Bring pot of salted water to a boil and cook the pasta to al dente.

  2. Mix the spices and olive oil in a small bowl. Coat the cauliflower with the spices. Heat a large skillet over medium high heat. Add the cauliflower and cook for about 10 minutes until seared and tender. Remove the cauliflower and set aside.

  3. Melt the butter in the skillet. Add the heavy cream and season with salt and pepper. Simmer until slightly reduced then add the parmesan cheese and mix well. Add the cooked pasta and a splash of pasta water. Top with the cauliflower and enjoy.
